We are delighted to present Peter Michaels @ Salt Grill and Sky Bar, in conjunction with Water and Wines, who have kindly sponsored the wines for this evening dinner.
Sir Peter started with a singular mission, to make wine in the terroir driven tradition of Burgundy and Bordeaux, under the California Sun and on California soil. All but one are estate grown in their mountainside vineyards.
All are handcrafted and in limited production.
In collaboration with Water and wines, we are pleased to present the range of wines from a "capricious" pinot noir to a Bordeaux varietals planted "In Heavens".
Look for the intense and powerful aromas of lychee in the Belle cote chardonnay and the zesty and fruity L'Apres Midi. We continue with the Ma Danseuse, most feminine of the pinot, name after Lady Micheal, who was a gold medal ballroom dancer. Le Caprice embodies the challenge of Pinot and rewards with the most fruit forward of the Pinot Noirs. Les Pavots is the Flagship blend with its signature blueberry note and paired with little brother L'Esprit Des Pavots,more free-form and fruit forward but nevertheless balanced, elegant. Au Paradis (In Heaven) with its raised gentle sloping plateau allows the Bordeaux varietals to develop in classic style
with silky tannins and deep red fruit.
Complementing the wines will be Salt at Ion. Chef Jake Kowalewski draws on his experience in HongKong and Japan, to produce a style infused with Asian inspirations. Focusing on serving the best ingredients and produce, we look forward to a delightful pairing of great cooking and wines!
